Fitness Friday {Skinny Chicken Cordon Bleu}

This chicken is so delicious I forgot I was eating the "skinny version"

Skinny Chicken Cordon Bleu
(adapted from SkinnyTaste) 



What You'll Need:
-Thin sliced boneless skinless chicken breast (about 3 ounces each)
-1 egg
-2 egg whites
-1 Tbsp water
-1/2 cup seasoned breadcrumbs
-1/4 cup grated Parmesan cheese
-5 oz thinly sliced deli ham
-6 slices reduced fat swiss cheese
**Might need to cut ham and cheese slices in half to fit

What You'll Do:
1. Preheat oven to 450; Spray a baking sheet or casserole dish with nonstick spray
2. In a bowl, combine breadcrumbs and cheese
3. In a separate bowl, mix egg, egg whites and water to make egg wash
4. Pound chicken if necessary (needs to be thin) and season with salt and pepper
5. On chicken: Place slice of ham and slice of cheese; roll chicken 
6. Dip chicken roll up in egg wash, then breadcrumb mixture
7. Place chicken-seam side down-on baking sheet
**Repeat process for all chicken breasts**
8. Spray top of chicken with nonstick spray
9. Bake 25 minutes

Serving Size: 2 chicken breasts
Calories: 378 per serving

Fitness Friday {Low Calorie Snacks & Treats}

I love to snack...I would much rather graze all day than eat meals.  Better choose the right snacks though :)
Here are a few ways I have cut calories while still enjoying a treat.



Vanilla Almond Milk
Alright, I love coffee. I need my fix every morning. I also love flavored creamers, but when I realized I was drinking around 200 calories, I knew something had to change! Silk's vanilla almond milk was perfect-good flavor without all the calories. No, it's not exactly like flavored creamer, but it does the job. And, I'm starting to actually enjoy good coffee instead of good creamer! I use about 1/4 cup.
90 calories for 8 ounces
 


Special K Cracker Chips
I'm the kind of person that likes to have a little *crunch* with my sandwich. Typical potato chips are high in calories with a serving size of like...7 chips. Are you kidding me? These bad boys are only 110 calories and you can have 30! THIRTY! Now that's a serving. There is a new flavor-Honey BBQ-I must try!

 Yoplait Greek Yogurt
Yes, please! Greek yogurt is an awesome treat because it is packed with protein to keep you full for longer. Plus...it's tasty. I'm usually a Chobani girl, but I've cut about 40 calories per serving by switching. And 40 calories counts! Yoplait Greek is smooth and creamy-a very good greek yogurt choice. Yum-o
100 calories per container




 Skinnny Cow Cookies 'n Cream
We all need some dessert every night from time to time. I mean real dessert...not some stupid fruit covered in fat free whipped topping. I am obsessed with Skinny Cow products. My favorite Cookies 'n Cream ice cream sandwich is delish. And BIG! Like, a real ice cream sandwich. 
150 calories for 1 sandwich

Of course, our old friends fruits and veggies are always a good option for snacking, and very nutritious. But sometimes, you just need a little something else.

Fitness Friday: Skinny Spinach Ziti

It's about time for me to get excited about getting fit again! I'm bringing back my Fitness Friday series in hopes that it will keep me motivated! Summer is around the corner, and I have no excuse for maternity wear this year ; )

Skinny Spinach Ziti
(adapted from SkinnyTaste) 

What You'll Need:
12 oz ziti noodles
28 oz crushed tomatoes
1 tsp olive oil
3 cloves minced garlic
10 oz frozen spinach, thawed
1 tsp oregano
2 tbsp fresh chopped basil
8 oz fat free ricotta cheese
1/4 C Parmesan cheese
2 C part skim mozzarella

What You'll Do:
1. Preheat oven to 375. Spray a 9x13 dish.
2. Cook pasta according to directions (al dente).
3. In a medium saucepan: saute garlic with the olive oil. Add chopped spinach, salt & pepper to taste, tomatoes, basil and oregano.
4. Combine sauce with pasta, then add 1 cup of mozzarella, parm cheese & ricotta. Transfer to 9x13.
5. Top mixture with remaining 1 cup mozzarella.
6. Bake 30 minutes or until cheese is melted and edges are slightly brown.   

Serves:8

Ten Months

It's hard to believe I have a ten month old. My little baby is quickly becoming a toddler...this Mama is not ready for that!

Please excuse my photos...lighting was terrible that morning!

Eating: My little bug LOVES to eat! Pureed foods are about to become a thing of the past as Peyton enjoys finger foods the most! You name it, she will eat it. I'm still trying to introduce new food groups slowly to monitor possible allergies, but she typically eats whatever we are eating! Favorite go-to foods: cheese quesadilla, grilled cheese, peas & carrots, banana, chicken bits, yogis, puffs, and waffles! I have dropped an afternoon nursing session, so she nurses 3 times a day now.

Sleeping: No changes in her schedule! (Although Peyton is starting to wake earlier and earlier...?). We start our day around 7:00am, nap 10:00-11:30 and 2:30-4, then bed around 7pm. I can really tell that P feels secure when we are on schedule...she knows what to expect and that her needs are being met!

  Teeth: Still just two on the bottom. It certainly doesn't stop her from eating though...she just gums everything! :)

Favorite Toys: Miss P has rediscovered her Fisher Price Activity Table since we put the legs on it! From her overflowing toy box, she typically chooses the Kleenex box, dish towel, and bottle of lotion... Why do we even buy toys?!

Skills: Peyton's fine motor skills are still on track, and she has begun to pull up (with some assistance). She can easily stand while holding on and is beginning to cruise...slowly. She says "hi" and calls everything "cat" and LOVES to nod.
It's clear that P can now follow simple directions (as in-"Leave the dog dish alone").

"No ma'am, leave that sign alone"

Happy Times: P loves to practice her new standing skill! She is slowly becoming a little more independent and I am really hoping this clingy phase is almost over! <Fingers crossed> This kiddo still absolutely LOVES the water, and we just moved her to a big girl bathtub!
We have started to introduce a little more TV time and she loves The Baby Channel.

Unhappy Times: When P gets 'scolded' she usually shows her attitude, then gets her feelings hurt (see above picture!). This last month was very difficult for our family as we just couldn't shake this respiratory infection...so I think everyone was a little needy and on edge :)

Months 1-10

Stats: Peyton still weighs 18 pounds. Our pediatrician assured us that this plateau in weight is normal and that she might only gain 2-3 pounds in the next YEAR! 
Still in 9 and 12 mo clothing.

My sweet girl,
You have officially been here for longer than you were in my belly...that's a hard reality to face because I still think of you as my tiny newborn! There are days when I long for that newborn time again-when all you did was sleep-but I have so enjoyed watching you grow and develop. You certainly keep your Daddy and me entertained as your sense of humor is beginning to emerge. You are becoming a goofy girl, and we love it!
